Il Dottor Maurizio Ventrucci ha condotto ricerche di patologia umana, di fisiopatologia e clinica in campo gastroenterologico, che formano oggetto delle pubblicazioni brevemente delineate più avanti. Gli argomenti maggiormente trattati riguardano la fisiopatologia e clinica del pancreas e del tratto gastrointestinale. I risultati conseguiti sono stati pubblicati su riviste scientifiche prevalentemente straniere caratterizzate da criteri di filtro nell'accettazione dei lavori e da fattore di impatto sulla comunità scientifica. E’ autore di 361 pubblicazioni, 65 come lavori in esteso su riviste internazionali con comitato di selezione e 49 come articoli su riviste italiane o capitoli su monografie e trattati per un Impact Factor globale di 180.
Il Dottor Ventrucci ha partecipato a congressi nazionali ed internazionali di Gastroenterologia e Medicina Interna presentando contributi personali. Nel settembre 1977 ha partecipato al Terzo Corso Avanzato di Gastroenterologia svoltosi presso il "Centro Ettore Majorana - Scuola Internazionale di Epidemiologia" di Erice. Fin dal 1980 ha partecipato, in qualità di Ricercatore, a diversi progetti di ricerca in campo gastroenterologico, finanziati dall'Università, dal Ministero della Pubblica Istruzione, poi della Ricerca Scientifica e Tecnologica. Nel maggio 1982 è stato invitato a partecipare ad un "Workshop internazionale" sul Pancreolauryl test a Monaco di Baviera dove ha presentato i propri contributi allo studio di un nuovo test indiretto di esplorazione della funzione pancreatica esocrina.
